Can you share with us how your culinary journey began and what inspired you to become a chef specializing in Southern cuisine?

Starting at the age of 7 with my mother…I was usually getting into some type of rebellious trouble, so as discipline, I was given two choices watching a series of Daytime TV soap operas” with wide-open and awake enthusiasm or being her kitchen helper.  So kitchen helper it was!  I remember watching my mother as she would explain why she would substitute certain ingredients in our meals because my father could not eat them because of his health conditions.    What started as punishment opened the doors of my young creative mind to learn the art of uniquely creating “It’s Organic, but tastes soulful’, in delicious southern recipes.  

How do you approach incorporating craft beer into your recipes, and what do you believe it adds to the overall dining experience?  

My first approach was to learn about how it was made first.  I actually went to an award-winning brewing and distillery college to learn how each staple style of craft beer are made and evaluate its flavors properties in conjunction with the foods we eat.  I soon realized that what I have learned over the years was to view craft beer attributes as unique style of liquid spices and seasonings.

Could you walk us through the creative process of melding craft beer with your dishes and how you ensure the flavors complement each other?

One technique I developed that helps in the flavor melding of craft beer recipes is libation phase layering, which is adding craft beer at the beginning, mid, and end points, which allows correction or elevation of your recipe.

Remember that craft beer is seasoned through its flavor attributes; this can only be done with a lot of taste balance and trial testing when cooking craft beer for your culinary creations.  

What are some key tips you can provide for home chefs looking to experiment with incorporating craft beer into their cooking?  

 A recommended few tips that have worked for me as I continue to go through the joys of cooking food with libations is to take notes, take pictures, and record your recipes.  Next, be willing to try different variations of flavor blends to find your culinary libation niche that works with the style of fresh foods you are passionate about cooking. Lastly, find your “I hate beer” friends to serve your recipes; this will bring you an unexpected, truly rewarding, interactive experience.

In creating healthy Southern-inspired cuisine, how do you balance traditional flavors with a focus on organic and locally grown ingredients?

We all know that southern foods are so tasty, but usually contain a few items or prepared in a way that is not healthy for us.  I made it my passion…to continue to find replacements that are easy to make and healthy alternatives, but still have that southern excellence in flavor.  Also… I buy from my local fresh farm markets; and ask the farmers detail questions on how it is grown and cultivated is key.

Why do you think it’s important to use locally sourced and organic ingredients in your cooking, especially when crafting Southern dishes?

Absolutely yes!  As we know, the least amount of time, transportation, and processing it takes to get from the farm to your plate gives you higher nutrients and incredible fresh flavors.  Supporting locally sourced vendors gets you fresher food and benefits the economy of your community by putting forth the effort in your area.

Can you share a few examples of how you adapt traditional Southern recipes to make them healthier without compromising on flavor?

 In more than a few southern recipes that some use “bacon-drippings” in southern style dishes I have made the change to using organic coconut oil instead with some natural spices to take it to a whole other level on the health and taste factor.  

How do you stay updated on food trends and flavor pairings to continually innovate your culinary creations?

I am fortunate to come from a long-line Legacy of renowned Southern Chefs, as well as have a number of great collaborative and creative culinary craft beer expert friends upon whom we share our exploring culinary ideas with and amongst each other over direct contact at info@tastethecraft.net and other social media outlets. Lastly, I am constantly putting into practice creating original Southern culinary creation recipes and exploring new culinary combinations.

What advice would you give to aspiring chefs who want to specialize in Southern cuisine and experiment with unique ingredients like craft beer?

My advice on how to cook with craft beer is to first learn how it is made and it’s historical origins as you experiment. Be sure to visit your area breweries with tours and pairing parties; a wealth of knowledge you will hear.  It will allow you to find your area of expertise and which style of libations chef you should follow.    

 Finally, how do you see the future of Southern cuisine evolving, and what role do you think craft beer will play in shaping this culinary landscape?

 I foresee craft beers being used and taught by top culinary institutes as a vital use in seasoning the elevation of new and currently known southern recipes.  I see new scientific breakthroughs in cooking with craft beer to support further health benefits and new incredible, celebrated southern food flavors.
